Cool Refreshing Summer Libations

Refreshing Raspberry Lemonade

INGREDIENTS:
3/4 cup fresh lemon juice
1/2 cup sugar
1 cup fresh raspberries
1 cup hot water
3 cups cold water
Ice

DIRECTIONS:
Blend lemon juice, sugar, raspberries, and hot water in a blender until the berries are pureed and the sugar is
dissolved. Pour into pitcher. Add cold water. Chill for at least an hour. Serve over ice. Add vodka to spruce it up.


Cucumber Mint Cocktail

INGREDIENTS:
1.5 oz gin or vodka
4-6 cucumber slices
1/4 lime, sliced
4 oz tonic water
6 mint leaves

DIRECTIONS:
Add mint, lime, gin or vodka to shaker and muddle. Add cucumber slices to shaker and shake vigorously.
Pour mixture into a  glass filled with ice and top with tonic water. Stir then let flavors blend together for a minute to enhance.


Watermelon Champagne Puree

watermelon smoothieServes 8

INGREDIENTS:
3 cups seeded watermelon, frozen
3 cups chilled champagne
2 tbsp fresh lemon juice

DIRECTIONS:
In a blender, blend watermelon, lemon juice and one cup champagne until smooth. Pour about 1/3 cup into eight glasses,
then pour 1/4 of remaining champagne into each glass. Garnish with a watermelon wedge and serve immediately.
