Culinary Artistry – Dataw Island
How would you best describe your creations?
At Dataw we need to keep our members intrigued with our offerings. We thus need to make variations to keep our dishes unique and interesting. We completely change our pub and dining room menu every six weeks to keep everything fresh.
What about your geographic region inspires you?
The Lowcountry of South Carolina is unique not only for some of the world’s best seafood but also some of the best local vegetables anywhere. We were way ahead of the “farm to table” trend. We’ve always been able to get the freshest ingredients from vendors that are less than a few miles away.
What is your favorite local ingredient?
Of all the ingredients that we are able to get locally, I would have to say that the fresh seafood is the very best. Getting seafood that is just out of the water is a marked improvement over seafood that needs to be shipped.
The club is, and continues to be, more active with a healthier lifestyle. We are always trying to adapt to these new trends. We are offering a lighter fare with fresher ingredients and smaller portions.
What is your favorite aspect of creating food for your club?
The challenge with any club is to be inventive. Dataw welcomes my culinary staff to take chances and not play it safe in the kitchen. This allows for us to have room for creativity. It is this creative cooking that makes our job fun.
What do you eat at home?
I work with food all day; at home, I keep my cooking pretty simple.
In your opinion, what is the most underrated ingredient?
I would have to say the garlic, when used properly, can greatly add to many dishes.
What is your favorite comfort food?
There’s nothing I like more than really good chocolate, particularly late at night.
Do you have any tips for preparing a meal for two?
I’d say when for cooking for two, a key component is to get quality ingredients and don’t over-create or overcook. Let the taste of the food shine through. Avoid lots of heavy sauces and condiments, which tend to mask the flavors of the food. Great cooking is using the tastes that are inherent in the food and let them shine through.
Dataw Island is a beautiful gated golf community located in Beaufort, South Carolina. Dataw Island is a perfect combination of gorgeous vistas, magnificent amenities, great real estate values and engaged residents. The Dataw Island Club features recently renovated Tom Fazio and Arthur Hills golf courses, a tennis center, a workout/massage facility and croquet lawns. The beautiful clubhouse overlooking the water is the center of all activity at Dataw Island.
